A weekend at the Frégate Bleue *** hotel – Le Flamant Rose restaurant

Here’s an address that deserves to be known, in François on Martinique’s South Atlantic coast. It’s here, in the Frégate district facing the îlets and the fonds blancs that this charming family-run hotel occupies a fabulous site, with the added bonus of a restaurant “Le Flamant Rose” and a hyper-talented chef!

An exceptional location

For a stay on the Atlantic coast...

I knew La Frégate Bleue a long time ago, and I can’t wait to see how the hotel has been renovated. It has to be said that it’s a family of hotel professionals who have taken over the business, the same ones who run the La Pagerie hotel at Pointe du Bout, a reference in Martinique.

Of course the first undeniable asset isthe geographical location… A very quiet neighborhood, a crazy view of the îlets du François and the baignoire de Joséphine, the gentle trade winds, a real cocoon of charm where I feel I’ll be able to take a well-deserved break and recharge my batteries in my own bubble. And if, on top of that, the chef keeps his promises, it should go down well!

Hotel Frégate Bleue ***

First observation, the hotel has been tastefully restored: the restaurant-bar area is brand new, nicely laid out, open onto the pool and even incorporating part of the pool. The fairly young team is pleasant and always ready to look after the well-being of its customers.

It’s super beautiful, a real tropical spirit reigns here.

L’hôtel Frégate Bleue *** offers 16 room types distributed throughout the house and the 2 adjacent buildings: from the small garden-view room to the vast suite sea view, not forgetting the family rooms with mezzanine and the “Loft”type rooms under the roofs. To each his own, intimate or family-style living room!

The bedrooms

I chose a premium double room sea view because I don’t want to lose a crumb of the panorama spread out before my eyes. It’s big, bright, the terrace with its deckchairs and small lounge is totally open to the sea: I can see theOscar islet, the Thierry islet, the coral reef… The small bathroom is nickel. Perfect for two, so all alone I’m comfortable in the 180 bed!

I put my weekend bag down and go for a stroll in the sea-view garden. A straw hut holds out its arms to me, I stretch out on the little swing, revel in the spectacle and take the opportunity to read quietly for a good part of the afternoon.

The pool and The jacuzzi

At the end of the day, I take a few lengths in the superb pool as turquoise as the white bottoms! I discover the full-length jacuzzi, a heated, bubbling corridor that completes my total relaxation… All around: deckchairs and large flowerpots form a colorful tropical atmosphere. Enough to spend countless lazy moments…

I have a 7pm appointment at the bar with friends I’ve invited to join me at the restaurant for dinner, so I go back upstairs to get ready, well rested.

The Flamant Rose restaurant

I can’t wait to discover the table, open evenings Wednesday to Sunday and Sunday lunchtimes (open to outside visitors by reservation). I’ve heard the highest praise for the new chef, Henri. Already the poolside bar is super pleasant, with cocktails from the bartender. There are also nibbling plates. My friends and I enjoy the “chinoiseries” while sipping our planters.

In the evening, the place has a fairytale feel, with its lighting, Greek blue walls, teak furniture and always that eye-catching pool.

With our table ready, we make ourselves comfortable and discover the chef’s new fixed menu (on some evenings he’ll continue to offer suggestions based on the market of the moment). Henri Nunes, of Brazilian and Portuguese descent, has worked with many étoilés chefs. From Asia to Brazil, he takes us ona world tour of flavors, accompanied by Jade his commis. It’s true that the menu is mouth-watering! I set my sights on the Homemade half-cooked foie gras with figs roasted in rhum vieux Clément as a starter (too good!), followed by a Tataki-style tuna backbone with maki and california rolls. Excellent: cooking, flavors, juices, I’m enjoying myself. And since I’m in “treat myself” mode, I can’t resist the Granny apple terrine with cider caramel and salted butter. A perfect sweet-tart note to end this delicious meal

The breakfast

I slept so well, I love falling asleep hearing the sea, and the bedding is really comfortable. Awakened very early I enjoy the view on my terrace while drinking a small coffee before going down to have breakfast by the pool. I check my messages (the only deviation from my total disconnection!) and already the lovely Marie is laying plenty of goodies on the table: tea, fresh fruit (yum maracujas!), tartines, a scrambled egg or au plat, ham, yogurt…. Super copious!

Breakfast is also available to out-of-town guests, as is the restaurant.

I spend the morning on a deckchair, between jacuzzi, swimming and reading (I’ve finished my book!). At the end of the morning, I check out.

I’m thrilled with this little getaway, I promise myself I’ll be back and show this place off to my friends and family!
