Time for a business lunch at the restaurant Le Dôme or a drink at the bar Le Punch by the pool on the 8th floor for afterwork, this is a must-visit address in Martinique

In the heart of the city...

As I have a friend currently staying there for work and he’s invited me to dinner, I’m taking the opportunity to arrive a little early. I’ll be able to introduce you to the hotel’s evolutions, meet manager Annie Desmet and chat with Ruddy Nonone, the chef in the kitchen whom I’ve known for a long time. And I’m pleasantly surprised by the noticeable changes.

– Hi Annie, thanks for introducing us to La Valmenière, for those who don’t already know!”

“The Karibéa Valmenière Hôtel & Spa is a benchmark in terms of business travelin Martinique. A central, strategic location, 5 minutes from l’international airport, at the confluence of business zones, shopping centers and departure point for the island’s main tourist attractions.

We have 120 rooms spread over 9 floors, including 4 suites and 4 rooms for people with reduced mobility: the hotel stands out for its discreet, attentive service. On the business side, we offer all the services required for business stays: high-speed wifi, meeting rooms and in-room facilities.

The 8thth floor, which houses the restaurant, barand infinity pool offers a unique view of the city.

Finally, our relaxation area by Blueness Spa provides pleasant moments of rest and “wellness” treatments for our visitors.”

– What are the notable changes?

“As you may have noticed when you arrived, since your last visit for the Guide Bois Lélé, the lobby sports new bright tones. ( It’s true that this harmony of blue and pink brings a lovely energy to the very large, very bright visitor reception area.)

We’ve also renovated and repainted a large proportion of the bedrooms, chosen new, sleeker furniture, redone many of the bathrooms. The renewal continues, we’re always looking to improve and satisfy our visitors with discretion and professionalism!”

Before heading to the restaurant, I make my way through a few floors. Here and there visuals remind us that we are indeed in the Caribbean: seabeds, tropical fruits, palmiers, traditional scenes…

The suite my friend occupies has a very nice view over the bay to Les Trois-îlets, a largeking-size bed, an elegant bathroom with Italian-style shower, a rather chic blue-white-gray ambiance, he’s very comfortable and close to all the suppliers he’s come to meet!

The Rooftop

Annie then takes me up to the 9thth floor and introduces me to her “rooftop”, a solarium with spectacular views over the city and sea featuring small lounges, deckchairs, and the Jacuzzi, a large whirlpool bath. At the end of the day the light here is exceptional! Get your cameras ready!

We head back down to the 8thth floor to the restaurant and Annie leaves me with Ruddy Nononne, the chef at the Dôme, restaurant of the hôtel Valmenière

Restaurant Le Dôme in Paris

So I join Ruddy in the kitchen, as he prepares the evening menu and the team sets up the restaurant for dinner. I’ve already met him on several occasions, and I’m keen to rediscover his way of working and the dishes he conceives and prepares for the Dôme’s menu… 40 years of which already 23 years in the business have given him a nice culinary career path.

The dining room has been completely revamped and redecorated, in a “city chic” ambiance typical of prestigious establishments, with tasteful declensions of celadon green, gray and white. A chic, hushed setting: sleek hues and furnishings where pleasant, attentive, professional and efficient service are all part of this moment of pleasure. The large bay windows are a veritable shaft of light on the bay and accentuate the exceptional feel of the place.

– Hi Ruddy, first of all, I’d like you to describe your cuisine and the inspiration behind your menu…

“For me, cooking is akin to the art of seduction! My inspiration is strongly rooted in my roots and the terroir of Martinique. I do my shopping, working with fishermen from Le Vauclin, local market gardeners and farmers, right down to edible flowers and local artisanal ice creams.”

Both calm and passionate, methodical and creative, Ruddy has really given the hotel restaurant a new dimension. His plates are beautiful and gourmet. Far from the impersonal international cuisine of some business hotels, Le Dôme offers a true mixed cuisine métissée, tasty and sober. It’s a place where you’re sure to enjoy a moment of discovery and culinary pleasure…. An address where you can organize a business meal, a dinner without fail for a special occasion. In short, a choice restaurant to discover or rediscover!

The various formulas offer good value for money (starter + main course at €32). Theevening menu is more etoffered.

This week, Ruddy put on the lunch menu a Fried rice, avocado condiment chatrou souskaÿ, Sriracha mayonnaise, a Half-cooked king mackerel, grapefruit salad and mango pickles, a Grilled saddle of lamb, couscouche purée emulsified juice, a Lemongrass panacotta, Julie mango salad, hazelnut crumble… He makes me taste it, it’s succulent, full of flavors and well-mastered spices…

The “Pa Ped Tan(single dish + drink at 26) formula is perfect for lunch without wasting time.

This evening at dinner with my friend, Ruddy added other dishes with names evocative of his gastronomy, I chose the Homemade foie gras terrine and apricot-pays chutney as a starter, then the Roasted cod backbone, crushed ti-nain, souskaÿ and its cucumber emulsion. My already satisfied taste buds let themselves be tempted by the Chocolate mousse, mango sorbet and manioc tuile!

Bar Le Punch (in French)

A nightcap at bar Le Punch, I recommend the bartender’s cocktail with the illuminated infinity pool and all the little lights on the bay, it’s magical…

Conclusion from both of us: it was EXCELLENT! The view was top-notch, the service in unison, a moment of pure pleasure… Well done Ruddy and your team too! And thanks to Annie for her welcome, congratulations on the new face of La Valmenière!”

What I appreciate about this hotel is its proximity to all of Martinique’s attractions and natural sites! Not to be missed:a visit to Fort-de-France, the Schoelcher Library, the big market to stock up on spices and fresh fruit… On the shopping side, the La Galléria shopping center is just 5 minutes away!

Don’t miss a visit to one of the island’s last family distilleries, La Favorite, which is well worth the detour…
And of course for holidaymakers, the location is central for getting to the beaches of northern or southern Martinique!!!
