Restaurant Le Dôme

Chef Rudy Nonone

Ruddy Nonone is the restaurant’s executive chef. He is also the chef of the restaurant Le Jardin des Alizés at the Squash Hôtel. An excellent cook, he and his team have given this restaurant a well-deserved reputation. I’ve already met him on several occasions, and I appreciate his vision of cuisine, his way of working and the menu he has created at Le Dôme. At 41 years of age, with 24 years in the business already, he has a very fine culinary record.

The restaurant is open for lunch and dinner. It is open to all, hotel guests and non-guests alike. The dining room has a ” city chic ” feel, typical of prestigious establishments, with shades of celadon green, grey and white, the furniture is uncluttered and the chairs very chic. The large bay windows, a veritable skylight on the bay, accentuate the panoramic view and the exceptional feel of the place.

In this hushed setting, with pleasant, professional service, you can’t help but appreciate this tasty moment.

Ruddy Nonone’s vision of cuisine is akin to the art of seduction! His inspirations are firmly rooted in his roots and the terroir of Martinique. He likes to choosehis produce and works with localfishermen, market gardeners and farmers, who supply him with fish, seafood, meat, vegetables and edible flowers. When it comes to sweet treats, he favors the island’s artisan ice-cream makers.

Both calm and passionate, methodical and creative, Ruddy has really given the hotel restaurant a new dimension in recent years. He loves to pass on his knowledge to his brigade.

I recommend the Le Punch bar! Imagine the evening at sunset, on the 8th floor, sitting at the bar, curled up in the armchairs or beside the illuminated infinity pool with all the little lights of the bay in the background: it’s magical! And that’s not even mentioning the barman’s cocktails and selection of rums…

The Rooftop

On the 9th floor of the hotel, you’ll find a rooftop with a solarium, lounges, deckchairs, a Jacuzzi and a large whirlpool bath.

The view over the city and the sea is spectacular, and at sunset the light is exceptional! I’ll never tire of it, it’s so beautiful!

As you can imagine, I love the hotel, I love having lunch there and going out for aperitifs with my friends…

The hotel has rooms adapted for disabled guests.
The restaurant is open to all. Breakfast is also accessible even if you’re not staying at the hotel. And in the evening, you can enjoy an aperitif by the pool at Bar Le Punch!

What I really like about this hotel is its proximity to all of Martinique’s attractions and natural sites! Don’t miss a visit to Fort-de-France, the Schoelcher Library, the big market where you can stock up on spices and fresh fruit… As for shopping, the La Galléria shopping center is just 5 minutes away!

Don’t miss a visit toone of the island’s last family distilleries, La Favorite, which is well worth the detour… And of course, for vacationers, the location is central to the beaches of northern or southern Martinique!!!!
