    - In the garden of the canes that make JM rums
    - You will see how the distillery works during the cutting process (from the crushing to the fermentation vats), right up to the impressive ageing cellar, one of the most majestic on the island.
    - On certain days, you will witness the burning of the barrels, which gives the rums their colour and aroma.
    - The visit will continue through the aisles of the cellars and the tropical garden, before arriving in the olfactory workshop which will prepare you for the tasting of the different vintages.

    - You will be able to buy JM rums and its excellent Shrubb (a marriage that combines the power of JM rum, the sweetness of cane sugar, the warmth of spices and bitter orange).

Some of these were awarded at the last Concours Général Agricole de Paris

The secrets of a great rum:
The J.M. distillery uses exclusively sugar cane grown on the estate's volcanic soil. The ageing of its old rums is done in American barrels containing Bourbon. Each year, the cellar master empties all the barrels to obtain a perfectly homogenous old rum and to fill each barrel.

This painstaking and meticulous handling allows the quality of each barrel to be monitored and the rum of the vintage being aged to be used for topping up.

J.M.'s particularity also lies in the final degree of its aged rums, which changes from one vintage to the next. The 10 and 15 year old rums are not reduced to obtain a precise degree before bottling.

One of our favourite distilleries, as much for the site as for its rums... Go ahead and leave us a comment.
