    Since 1887, the production of the prestigious Rhum Clément has been carried out in the purest tradition according to the rules and production techniques inherited from Homère and Charles Clément. The buildings and machinery were restored in 2005.

    Today the old distillery houses the rum and industrial heritage interpretation centre.
    Clément agricultural rum is a natural product resulting from the direct distillation of pure cane juice in strict compliance with the Appellation d'Origine Contrôlée (AOC) rules.

    After distillation, the white agricultural rum is stored for a minimum of three months in stainless steel vats where it is stirred so that it can rest, oxygenate and eliminate certain volatile substances. This slow preparation work, which can last up to eight months, allows the rum to become balanced and to obtain a roundness in the mouth as well as a greater aromatic intensity.

    The old agricultural rum is stored for a minimum of three years in oak barrels, which are housed in the six cellars of the Habitation Clément. Today, these cellars house more than one million litres of rum which are patiently aged in oak barrels, taking on the aromatic and colouring substances of the wood which give them their character, before being marketed.
