The Spirit of Zanzibar

As an old faithful, I meet up with Julie, who took over the reins of the restaurant on her own 6 years ago. Appointment made for this morning, a few hours before service! All hands are already on deck, both in the dining room and in the kitchen, a mixture of concentration and good humor. I love eating here at lunchtime, going upstairs and letting my gaze wander out to sea, with a breathtaking view of the Caribbean Sea. In the evenings, it’s a completely different, hushed atmosphere, with subdued lighting and lounge music. It’s like a romantic night out, reserved for a special occasion. In short, it’s the ideal place for a romantic dinner!

Local Martinique cuisine

Back to the plate! Julie proposes the star of the day, the Carré d’agneau… I’m salivating with anticipation, I also want to taste her stuffed crab, which smells so good straight from the oven, and for dessert I choose the café gourmand with its array of little delicacies! Freshness is Julie’s signature and her absolute priority. She has forged close relationships with farmers and fishermen.

” I want to work more and more with short-distance produce, so I travel the island to meet small producers whose products I test and imagine new recipes. My menu varies with the seasons to create new flavors and new combinations ! “

For meat, she visits the Domaine de la Bergerie farm in Le Vauclin. There, she chooses her meats, such as the côte de cochon, specially prepared for Zanzibar, or Monsieur Claude ‘s lamb, which she prepares according to her inspiration: 5 o’clock leg, mouse, rack… She also buys her vegetables, spices and herbs here.

Fishermen deliver their catch to her: tuna, marlin, purse seine, Caribbean salmon and lobster, which she is particularly fond of. Poached, grilled, tartar, ravioli, semi-cooked or parillada : her preparations reveal all their iodized flavors.

Even the cheese is local, like the goat cheese from Marjolait, hand-molded with local milk in Rivière Pilote. Fresh produce, an accomplished chef, a wine cellar and a selection of rums, it’s the perfect combo for successful lunches!

Service is the other key to Zanzibar’s success. For Julie, the customer must be the focus of every attention, and she wants you to feel welcome from the moment you arrive!

   Refined, warm decor, tablecloths, cloth napkins, pretty crockery, flowers, candles, works by local artists, wine service, water service – every detail counts and is part of the Zanzibar experience…
