Meeting with Gabriel Manon

Today I had the chance to speak with Gabriel Manon, “Gaby ” to the regulars, the owner of one of the best restaurants in Fort de France. I want to talk about the Yellow of course! It is an address where you do not arrive by chance: in the city center, upstairs, you could even pass without seeing it and we must admit that it would be a shame.

Restaurant The Yellow

Already 8 years that this charming restaurant enchants its (very) numerous faithful. I, who have been following it since the beginning, have noticed that the establishment has evolved well. Gabriel has managed to make it a unique place, very warm, its intimate atmosphere, its careful setting. I’m curious to know his recipe for success, even though I already know we always eat very well here…for being a loyal guide Bois Lélé

Meet Gabriel

Gabriel, can you tell us how you managed to become a reference table?

“After years spent in large establishments, I wanted to create my own table, a place on a human scale, a cosy atmosphere, with a nice welcome, good service and of course good food! This is my vision of a good restaurant, and 8 years later, we can say that I have achieved what I wanted. The location might have seemed unlikely. Thanks to positive feedback from customers, word of mouth quickly worked. We obtained the Quality Tourism and Master Restaurateur labels.”

A cosy restaurant

It’s true that we feel good at Yellow! The golden yellow (you get the reference!) matches the carmine red, the tables are tablecloths, the armchairs super comfortable, the light subdued, and some of the dishes served under a bell.

The service provided by Gabriel is attentive, discreet and efficient. He always has a word for his guests, he knows how to advise them and collect their opinions. In the evening the atmosphere is even more hushed and intimate.

A small room away from the restaurant can accommodate a small group up to 15 people.

A home kitchen

What I love about Yellow is that the menu changes very often. It allows regulars to discover new recipes, new flavors each time. Gabriel and his chef develop the menu from local market products, ultra fresh arrivals and offer 100% homemade dishes, even the bread is baked here!

In general, there is always a choice of 3 starters, 4 main courses (1 white meat, 1 red meat, 1 fish, 1 seafood) and 3 or 4 desserts: 1 chocolatey, 1 fruity, 1 creamy, a gourmet coffee.

A unique cellar

If you’re a lover of good wine, you’re in for a treat! This is a big strength of the Yellow. An incredible choice, vintages that you can’t find everywhere. Gabriel’s cellar, he speaks best about it…

“I started building the cellar about 5 years ago. Every year I go to the hexagon to meet small producers and winemakers, I taste, I select. I’ve made great relationships and exclusives. Some now make blends just for me, for the Yellow (two wines and two champagnes). I expanded the restaurant because the cellar was taking up a growing part. We went from 85 m2 to 210 m2, including 60 m2 just for the cellar!”

Gaby also sells his wine, so if there’s a vintage you like, you can leave with it!

Don’t miss out! Gabriel keeps his restaurant alive, there’s always something going on at Yellow! We all know about his Full Moon Dinners, often an opportunity to go out as a couple for a romantic evening. The cellar is highlighted during themed dinners, tasting, initiation in oenology… As there are always many enthusiasts, a word of advice: as soon as the event is announced, don’t delay in booking…

I am proud of what I have accomplished, of my journey, of having gone to the end of my project.

The fidelity of my guests is my greatest reward.
