  • 3 endive
  • 1 garlic clove
  • 1 tablespoon oil
  • 1 chili pepper
  • 1 lemon
  • laurel, thyme, parsley
  • salt
  • pepper


  1. Fine chop the country onions, garlic, thyme, bay leaf and parsley.
  2. Pour over a bowl of boiling water, oil and lemon juice.
  3. Add salt, pepper and chili pepper.
  4. Let steep for a good 10 minutes.

This sauce spices up fish, shellfish and grilled meats.Dose the amount of chili according to the desired effect and don’t forget to remove the seeds!”

Small variation: you can add a brunoise of tomato or grated carrot.
