Codfish accras

The must-have

  • 300 g flour
  • 300 g cod
  • 1 packet yeast
  • 4 cloves garlic
  • 6 country onions (cives)
  • 1 half chilli
  • 1 sprig parsley
  • Pepper
  • Oil bath for frying


  1. Boil cod for 20 min to desalinate. Change the water, repeat the operation. Remove skin and bones from cod, crumble with fingers.
  2. Fine chop chili, parsley, cives and garlic. Stir into the crumbled cod, season with pepper.
  3. In a large bowl sift the flour with the yeast. Make a well and pour water until you have a homogeneous doughnut dough.
  4. Incorporate the cod into the dough. Let stand 20 min.
  5. Drop small spoonfuls of batter into the boiling frying bath. Let the accras swell and brown, then drain on paper towels.
  6. Serve immediately!
