Banana flambé

For 8 bananas

  • 500 g cane sugar
  • 25 cl water
  • zest of one lime
  • 1 stick grated cinnamon
  • 2 tbsp liquid vanilla
  • 25 cl old Martinique agricultural rum


  1. In a large skillet, bring the cane sugar and 25 cl water to a boil. Cook until the caramel takes on a golden color (approx. 5 min).
  2. Incorporate the lemon zest, grated cinnamon, and vanilla.
  3. Add the 8 ripe Martinique dessert bananas and continue cooking by coating the bananas with the syrup until they caramelize (approx. 10 min).
  4. Flame off the heat by adding 25 cl old rum.
  5. Serve with a scoop of vanilla ice cream.
