At Habitation Céron in Le Prêcheur, cocoa has regained its noble status thanks to the work of Julie Marraud des Grottes, who has revived its cultivation and the production of exceptional artisanal chocolate in Martinique under the name ‘La Fabrique de Julie’.
As part of a ‘from tree to bar’ approach, she oversees the entire transformation process: growing the cacao trees, harvesting the ripe pods, fermenting, naturally drying and processing the beans. This rigorous, artisanal work brings out the full aromatic richness of Martinique's cacao.
