    Rum:
Two vintages of white rums and three vintages of very old rums are created.
The A1710 agricultural white rums are distilled in a Charentais still unique in the West Indies. To this bare heated copper still, called "La Belle Aline", was integrated a distillation column with seven trays, also made of copper. The use of copper creates a saponification phenomenon that gives a different flavour to distilled wines.
The three vintages of very old rums, "Soleil de Minuit", "Tricentenaire" and "Nuée Ardente" are all manually bottled at the Habitation in our original carafe, each copy of which is numbered.
Each stage of production is a subtle balance between the excellence of ancestral know-how and the requirements of modern techniques.

    A bit of history:
The history of the Assier family in Martinique began in 1710 when Jean Assier, a native of Montpellier, arrived on the island and worked for the Governor of Phélypeaux. In 2006, its direct descendant, Yves Assier de Pompignan, embarked on an audacious and exciting project: the creation of a new rum distillery bearing within it the history and richness of the Caribbean region. The takeover of the Habitation du Simon, ideally located in the heart of an exceptional terroir, and the unfailing passion that drives it for its island and its riches, enabled Yves Assier de Pompignan to create A 1710, a rum brand combining tradition and modernity.

    An innovative distillation:
The search for an innovative distillation solution, both qualitative and traditional, led them to choose a Charente still made entirely of copper, completed by a column with seven trays. Fermentation vats at a controlled temperature and allowing long fermentations are retained in order to obtain wines with a strong aromatic potential. The rum factory is located in the old 18th century sugar purgery, in the heart of the estate. The main house has been refurbished to accommodate visitors during visits and tastings in an exceptional setting.

In 2016, after 10 years of learning and imagining, the brand new A 1710 distillery was inaugurated.
