Rum:
Two vintages of white rums and three vintages of very old rums are created.
The A1710 agricultural white rums are distilled in a Charentais still unique in the West Indies. To this bare heated copper still, called "La Belle Aline", was integrated a distillation column with seven trays, also made of copper. The use of copper creates a saponification phenomenon that gives a different flavour to distilled wines.
The three vintages of very old rums, "Soleil de Minuit", "Tricentenaire" and "Nuée Ardente" are all manually bottled at the Habitation in our original decanter, each copy numbered.
Each stage of production is a subtle balance between the excellence of ancestral know-how and the requirements of modern techniques.
